Replacements

Bánh Xèo Flour Mix:

  • 1 cup rice flour
  • 1/4 cup corn starch
  • 1/2 tsp turmeric powder
  • 1/2 cup coconut soda or beer (or until the batter is pretty watery)
  • 1 cup water (or until the batter is pretty watery)
  • 1/4 tsp salt
  • 2 stalks green onions minced

Beer or coconut soda:

  • If you don’t have access to coconut soda and don’t drink alcohol, use tonic water or seltzer.

Don’t have lime or don’t want to buy one?

  • Use a spoonful of vinegar instead!

Bánh Xèo

Ingredients

Batter

  • 1 packet of Bánh Xèo Flour Mix
  • 1 can of beer or coconut soda
  • 1 cup of water
  • If you don’t have access to the flour mix, use the following:
    • 1 cup rice flour
    • 1/4 cup corn starch
    • 1/2 tsp turmeric powder
    • 1/2 cup coconut soda or beer (or until the batter is pretty watery)
    • 1 cup water (or until the batter is pretty watery)
    • 1/4 tsp salt
    • 2 stalks green onions minced
  • 20 slices of pork shoulder or belly
  • 12 pieces of shrimp (with or without the shell)
  • 2 cups of bean sprouts

Garnish

  • bunch of mint or any herb of your choosing
  • green leaf lettuce

Sauce (Nước Chấm)

  • 3-4 tbsp fish sauce
  • 4 tbsp water
  • 4 tbsp sugar
  • 1/2 lime
  • 1-2 garlic cloves chopped
  • 1 thai chili

Steps

Batter

  1. Flour mix: Combine the flour mix with 1 can of beer or coconut soda and 1 cup of water. Or follow the instructions on the packet. Mix until the consistency is more on the watery side.
  2. Batter from scratch: If you’re making the batter from scratch, combine all the ingredients. Mix until the consistency is more on the watery side.
  3. Once mixed, cover bowl and refrigerate for at least 30 minutes.

Nước Chấm

  1. Put sugar and water in a container.
  2. Slice lime in half and squeeze into sugar water.
  3. Chop garlic and chili into tiny pieces and add.
  4. Add fish sauce one tablespoon at a time. Taste for desired saltiness.

Meat/Veggies

  1. Cut up pork into thin slices.
  2. Clean shrimp and peel if desired.
  3. Wash bean sprouts, lettuce, and mint.
  4. Set lettuce and mint aside.
  5. Keep meat and bean sprouts by the stove.
  6. Take batter out of the fridge and stir again.
  7. Heat up a nonstick pan to medium heat. Add a little oil. Put in your pork pieces (3) and shrimp (2-3).
  8. Flip the pork around and shrimp after a minute.
  9. Spray the pan with more oil.
  10. Add in the batter in the thinnest layer you can. Add bean sprouts on half of the Bánh Xèo.
  11. Cover pan with lid for one minute.
  12. Fold the pancake in half.
  13. Cook on both sides for a minute or two. If you want it more crispy, add more oil to each side before frying.
  14. Serve with lettuce and mint. Dip in the nước chấm 🙂
