Garlic Chives:

Ingredients

Spring Rolls

  • Spring roll wrappers (Three Ladies Brand is a classic)
  • Pork (any cut works depending on your preference, I used pork belly)
    • 1/2 an onion
    • 1 tbsp salt
    • 1 tbsp sugar
  • Shrimp, sliced in half lengthwise so they are as thin as you can make it
  • Green leaf lettuce
  • Mint
  • Rice noodles or bánh hỏi noodles
  • Garlic chives (I used green onion because it’s what I have but traditionally it’s with chives)

Peanut Dipping Sauce

  • Oil
  • Garlic (minced)
  • 8 spoonfuls of Hoisin sauce
  • 2 spoons of peanut butter
  • Crushed peanuts as garnish

Steps

Pork

  1. Add your pork to a pot with water, an onion, salt and sugar
  2. Bring to a boil and then reduce heat to medium so that it simmers. Depending on the size of the pork, simmer until temperature reaches 145 degrees. Or you can go off vibes and cut the pork open to see if it’s cooked 😂
    • While it’s cooking go prep veggies! See instructions below
  3. When pork is done, take it out and let it rest for a couple of minutes.
  4. Slice pork into the thinnest slices you can.

Shrimp

  1. Clean and slice shrimp in half to be as thin as possible.
  2. Use the water from the pork to boil the shrimp! You can also fry them until they turn pink.

Noodles

  1. Follow the instructions on the package. Usually they’re specific to the brand but it definitely involves some sort of boiling/soaking/rinsing.

Peanut Dipping Sauce

  1. Take a pan or pot and heat it UP.
  2. Fry garlic until fragrant or until they start to get a brown color but don’t burn.
  3. Add in two spoons of peanut butter.
  4. Add in eight spoons of hoisin sauce.
  5. Add in some water (I grabbed some of the water from boiling the pork) until desired consistency.
  6. Stir until all ingredients are combined. If you don’t want the sauce to be thick, add more water.

Veggies

  1. Grab your lettuce, mint and garlic chives (or green onion) and wash them. Salad spin or shake as much water off as you can.
  2. Cut lettuce to match a bit shorter than your spring roll wrappers.
  3. Pick mint off branch.
  4. Cut garlic chives so that they fit in your spring roll wrappers. (You can cut them and make them stick out too as this is probably more traditional).
  5. Display nicely on a plate or just throw it on there, no one’s watching.
