- Any type of rice noodle can be used for this, whatever you can find at your store!
Miến Gà
Ingredients
- 3 chicken thighs
- 1 medium knob of ginger, peeled
- 1/2 a white onion, peeled
- 1 medium shallot, minced
- 3 garlic cloves, minced
- 1 green onion, white part cut about 1 inch long
- 2 tbsp of fish sauce
- 1 tbsp salt
- Mung bean, bean thread, or glass noodles
- Mushrooms, sliced and optional as I added this because I had it in my fridge
- Garnish of cilantro, green onion, and fried shallot (optional)
Steps
- Heat up a pot and fry chicken and take out when both sides are browned.
- Take out and fry garlic and shallots in the same pot.
- Fill pot with 5-7 cups of water.
- Add in ginger, onion, chicken thighs, green onion, fish sauce, salt, and mushrooms.
- Simmer for 30 mins-1 hour.
- Cook noodles on the side.
- Shred chicken when cooked and add back into the pot.
- Simmer for another 5-10 minutes.
- Serve and garnish with chopped cilantro, green onion and fried shallot.
